Really healthy option for your meatless day. You’ll need:
- 1 bunch of kale
- 1/2 bunch of green asparagus
- 2 cups of cooked green lentils (boil for 25 minutes with some salt until soft, and drain)
- 1/2 a large onion, cut into thin wedges
- 2 tbslp of extra virgin olive oil
- 1 tsp of fresh grated ginger
- 1 tblsp of curry powder
- 3 cloves of garlic
1- Heat the olive oil in a large skillet. Put in the onions and cook until translucent (5 minutes). Next, put in the garlic, curry and ginger. Mix well, until fragrant (30 seconds or so).
2- Cut the asparagus into 1/2 inch pieces and roughly chop the kale (take the stems, use just the leaves). Put them in the skillet and cook until the kale is wilted (about 2-3 minutes).
3- Put in the 2 cups of lentils and mix well. Season with salt and pepper, and enjoy!
